Inspiring Conversations with Ashley Swanson-Torres of Veg’n Out

Today we’d like to introduce you to Ashley Swanson-Torres

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
The journey to bring Veg’n Out to market started nearly seven years ago when my husband, Daniel, was diagnosed with type 2 diabetes, but we didn’t know the impact it would have until three years ago when we reimagined what our life would look like in the next 15 years. I was in corporate America, my husband was traveling more than 250 days a year, and we knew we wanted to integrate into a community for our young children and give back the best way we knew how. Through the inspiration of Danny’s transition to a plant-based diet and reversing his diabetes within six months, the way we ate and fed our family drastically changed and became our new way of life. We combined our love of real, whole-food smoothies, cold-pressed juice and gourmet salads to create Veg’n Out, a plant-based shop in Lake Nona, Florida, a community known for its focus on health, wellness and innovation. Three years later, in September 2020, we opened our doors amidst a pandemic aiming to help the community improve their immune system naturally. Food is medicine, and you are what you eat!

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Our journey has been anything but smooth. We’ve fought to see our vision come to life – from securing a lease with world-renowned Tavistock Development Group, an SBA loan to fund the project, and building out and opening during the pandemic. Our saving grace has been a group of industry experts who believed in the concept and us personally. They became the advisory board that would give us the credibility we needed to be taken seriously.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
Veg’n Out is a holistically healthy cold-pressed juice, smoothie and salad shop that focuses on whole-food, plant-based nutrition that’s fresh and literally makes you feel good from the inside out. In collaboration with a holistic nutritionist, the menu pairs a full salad concept with a smoothie bar inspired by the natural life of Costa Rica and the most nutritious small-batch cold-pressed juice in town. We have one, two and three-day cleanses unlike anything else in the market, and you can even buy monthly subscriptions plans that are delivered directly to your door to keep you accountable for incorporating more plants into your diet on a regular basis. We don’t advertise being plant-based or vegan because we want everyone to feel welcome at Veg’n Out. It isn’t about eating less meat or being vegan; it is about eating more plants for your health and realizing that you can be satiated and satisfied without feeling like you are giving anything up. The rest happens naturally.

Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
We would be nowhere without all of the support of our family, friends and advisory board – from developing the brand and creating a killer juice and smoothie line to helping secure an architectural firm, negotiating a commercial lease, designing a kitchen for operational efficiency, and simply being accessible and engaged when we’ve needed their help the most. Danny and I are forever grateful for their heartfelt desire to see us succeed. It’s emotionally overwhelming when I think about the sincere support they’ve given – being in our corner and providing just-in-time guidance that helps us persevere.
