Today we’d like to introduce you to Juliana and John Calloway.
Hi Juliana and John, so excited to have you with us today. What can you tell us about your story?
John and I met while we were opening restaurants in LA. We both worked for large corporate restaurant groups when we started dating. After getting married and starting a family, we decided to move to Orlando, FL to be closer to my family. We were both tired of traveling around and decided it was time to open up our own place. Since John had spent so much time in Mexico opening restaurants and we both wanted to do something fast-casual, our concept came to be Black Rooster Taqueria.
While John beautifully created all of our dishes and helped design the restaurant from start to finish (even making the tables by hand!) Juliana spent her time adding design elements and creating all training materials and coming up with the marketing plan to help our taqueria take Orlando by storm! We only offer the freshest ingredients, we make all tortillas to order, and you will taste flavors you’ll never forget. Although we’re not about large burritos or a big slab of sour cream on your plate, you’ll never leave hungry. Our little taqueria has brought us so much joy. When we first opened it our four-year-old son (who’s eight now) become our Chief Tasting Officer. He would help John taste test all the new recipes and give his “notes”. We now have a two-year-old who eats our made to order guacamole and whose third word ever was “taco”! We’ve been so blessed to be embraced by the Orlando community and we can’t wait to share our food with you!
We all face challenges, but looking back would you describe it as a relatively smooth road?
The road to opening your first independent restaurant with no investors is no easy feat. We definitely went through some struggles trying to get a loan, finding the perfect location, just getting everything ready to go. It was just the two of us! However, once we started to get our team in place and once we got open, it was much better. Restaurants will always be hard work, no matter what, especially with a small team and using sourced food and quality product. Thankfully our fanbase is strong, our guests come in 3-4 times a week! The Orlando community has been AMAZING since we opened.
How can people work with you, collaborate with you or support you?
We’re about to open our second location in Orlando. Our plan is to open in late Spring in the Hourglass/Curry Ford West area of Orlando. Our new space will have tons of outdoor seating, as well as a couple of brunch items in the works that we’ll talk more about closer to the opening date!
