Meet Daniel and Kristina Mercedes of The Dancing Empanada

Today we’d like to introduce you to Daniel & Kristina Mercedes.

Hi Daniel & Kristina, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
First and foremost, I want to thank God for putting me where I am today. I would also like to thank my mother and father for teaching me how to cook. I started four years ago selling empanadas and plates of food out of my car! I served mostly barbers and mechanic shops. Two years ago, I met my wife and together, we purchased our first food truck. It didn’t have anything we needed so we worked and saved and built it up ourselves (huge learning process!)! Once on the road, we worked as many jobs as we could find until we could afford our second truck (twice the size of the 1st one!) We now have a set location for one of our trucks at The Debary Car Wash and the other we work large events and festivals. We plan to eventually franchise throughout Florida with other trucks and even market booths! Our long term goal is to build a legacy for our children’s future.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
It had some definite rough patches! I think working together as a team makes it runs more smoothly. The learning curves we have run into were working with the city/county requirements for food trucks and learning the best locations or jobs to take that were the most financially beneficial.

We’ve been impressed with The Dancing Empanada, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
We are a family-run food truck that specializes in empanadas. We have a wide variety of homemade empanadas ranging from breakfast to wild flavors like bbq chicken with mac n cheese to desserts like apple pie a la mode. What sets us apart is the variety, that our empanadas are STUFFED with filling and that you can buy them frozen to go!. We are most proud of the uniqueness of our flavors and that everything is made from scratch. We do food truck events, festivals and fairs but we also cater parties, weddings, luncheons and employee appreciation events. We have been truly blessed with some amazing loyal customers so we decided to start giving back to our community. We choose a charity that speaks to our hearts quarterly and serves them hot meals. This year we have served a local homeless shelter and donated to Childhood Cancer Foundation.

The crisis has affected us all in different ways. How has it affected you and any important lessons or epiphanies you can share with us?
Covid hasn’t affected us. People have still been out at events!
