Today we’d like to introduce you to Irvin Collier.

Hi Irvin , so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
While at a family function my girl wanted seafood because she’s from Jacksonville and it’s fresh seafood readily available..
We didn’t find what she was looking for and that’s when I saw a need and decided to bring fresh seafood to the area.
I started selling fresh seafood wholesale… pre-ordered.
I always loved to cook and I started cooking for my family. They said it was so good that I could open a restaurant.
From there I saved my money and got a food trailer. I started at a central location. Now I do huge events like Daytona Bike and I’m open to catering! The rest is history

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Finding good help is hard, running a business period has its challenges

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I specialize in serving delicious, flavorful seafood.
I’m known for drippin’ sauce all over the city and that’s my slogan. My garlic dishes are drippin in my signature garlic butter sauce And seasonings and the taste is like no other.
I’m most proud of making my dreams come true… starting from the bottom.. saving up for my food trailer, permits, license, commissary and doing events. Setting goals for myself and knocking them down.

I believe what sets me apart from others is the flavor in my dishes. It can’t be duplicated or imitated.

Can you tell us more about what you were like growing up?
As a child I liked challenge. I ran track and field, I was a Boy Scout. I was always handy. I had an interest in fixing things that were broken.
