Hidden Gems: Meet Shanna Lee Millsap of Jamrock Eatz LLC

Today we’d like to introduce you to Shanna Lee Millsap.

Hi Shanna Lee, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
My story really started in my grandmother’s kitchen. I grew up watching her prepare meals with so much care and love for our large family every single day. She made it look effortless, and her kitchen became my classroom long before I ever stepped into a commercial kitchen or led a catering team.

I didn’t realize then how much those early moments would shape my life, but they planted a seed. Over the years, I worked in the hospitality industry from all-inclusive resorts to fast food management and later, corporate leadership. With every role, I gained perspective and a clearer sense of my purpose and a deeper understanding of what I wanted to create.

Starting Jamrock Eatz was a leap of faith. I knew I wanted to build something that brought people together through food something that felt personal, memorable, and elevated. It started with intimate private dinners, then expanded into pop-ups, weddings, and corporate events. Today, Jamrock Eatz is more than just a catering company it’s a brand built on bold flavors, heartfelt service, and unforgettable experiences. Because at Jamrock Eatz, we believe: You deserve delicious!

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It’s definitely had its twists and turns. In the beginning, I was doing everything myself planning, shopping, cooking, and cleaning up all while trying to figure out how to run a successful business. There were late nights, burnout, and moments where I questioned if I had what it took.

One of the biggest challenges was balancing the creative side with the business side. I knew how to cook, but I had to become more disciplined, learn how to build systems, manage logistics, and keep the business running. I also faced imposter syndrome, especially without a formal culinary degree.
But every challenge became a lesson, and those lessons built the foundation I stand on today. They’ve made me stronger, more focused, and even more committed to my vision.

Appreciate you sharing that. What should we know about Jamrock Eatz LLC?
Jamrock Eatz is a full-service gourmet catering company offering elevated dining experiences for weddings, private dinners, corporate events, and community pop-ups. Whether we’re serving two guests or two hundred, we make sure every person feels cared for and celebrated.

We don’t drop off food and disappear. We listen to our clients’ stories, understand their vision, and build a menu that brings it to life. One of our proudest moments came from a past Google review where a client shared:

“The absolute best food—was the best hot fresh delicious savory. I asked if I could pack her up and take her back to Louisiana with me. So down-to-earth, real cool chef, very sweet lady… felt like a friend I’ve been knowing for years. When she came through the door, I instantly felt her spirit and we hugged like friends who haven’t seen each other in years. I WILL be booking her every time I’m in Orlando for sure.”

It’s moments like that, that remind me why I do what I do. We’ve proudly maintain a 5-star rating across our reviews, and we stand by our motto: You deserve delicious!

We’d be interested to hear your thoughts on luck and what role, if any, you feel it’s played for you?
I believe luck shows up when preparation meets opportunity. There have definitely been “right place, right time” moments, like someone tasting our food at a small event and calling the next week to book us for their wedding. Or meeting someone at a pop-up who later connected us to a major corporate client. But those lucky moments only came because I kept showing up, even when things were hard.

Of course, there’s been bad luck too weather cancellations, last-minute event changes, and unexpected setbacks. But those challenges taught me flexibility, grit, and grace. They shaped who I am as a chef, and they helped shape Jamrock Eatz into the resilient and purpose-driven brand it is today.
