Check Out Patricia Palacios’s Story

Today we’d like to introduce you to Patricia Palacios.

Hi Patricia, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
I’ve honestly loved hospitality for as long as I can remember. I graduated from Rosen College of Hospitality at UCF in Orlando, and I’ve worked in quite a few different restaurants over the years. That experience really helped me realize how much I love the industry and, especially, connecting with people through food.

My love for baking actually started from a personal experience. I was really intolerant to gluten, and I started experimenting with sourdough because it was something I could actually enjoy. Learned that sourdough cuts down gluten about 60%

Eventually, what started as my own personal food journey turned into Mama Dough. I never really set out thinking, “I’m going to start a business.” It just naturally grew from something I loved doing for myself into something I could share with other people.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
honestly feel like it’s been a pretty smooth road. I truly believe that everything happens for a reason, and that every experience is an opportunity to learn and grow. I take each step as I feel ready for it and trust the process. I think that mindset has really helped me get to where I am today

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I own and run Mama Dough, a small sourdough bakery here in Orlando. I specialize in naturally leavened sourdough breads, bagels, cinnamon rolls, and other pastries. I do a mix of wholesale, pop-ups, and collaborations, so I get to experience both the creative side of baking and the hospitality side of connecting directly with customers.

I think what I’m most known for is my sourdough bagels and cinnamon rolls, but honestly, I’m most proud of how much the business has grown from where it started.

What I think sets me apart is that I really care about the entire experience, not just the product. My background in hospitality has taught me to pay attention to the little details and make people feel welcome. I’m also constantly learning and experimenting, so I’m never afraid to try something new.

If you had to, what characteristic of yours would you give the most credit to?
Attention to detail and always trying to make things better
