Today we’d like to introduce you to Enrique Teran.

Hi Enrique, thanks for joining us today. We’d love for you to start by introducing yourself.
Everything to start with my mom I’m on a used one food business on Mexico City we used we sell food on the street and this how do I learn all the seasons are all the preparation for the authentic Mexican food we coming to United States to get a better life and I just had opportunity to open my own food business and I decide to open my food truck the name of the Tacos la Catrina is because it’s a tradition in my country día de muertos that we honor our parents they pass away.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It was very hard in the beginning a difference of language and various cultures it was very tough work and safe and try to take care of your family at the same time try to make your dreams come true in the same town provides a better life for your family it was a moment today just want to get up at around for my mother the no matter what if we wanted we can do it and fight for your goals and don’t stop and keep coin and I always have in my mind that I want to have my own restaurant and my advice for the people that want to do it to inform and get a better understanding how did you can open your restaurant because it’s a moment if you want to do something and people that will take try to take advantage of you if you know well-informed that’s what happened to me when I buy my food truck they recommend some thing that I was not needed and I pay for and I’ll find out there was know what I need on my business and I ended up spending more money.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I specialty I will say it will be a tacos like I always say un taco al es la llave de la alegría we grow up eating tacos on the street this is taco it’s make with passion with love you have to love what you do and most important thing love seeing the faces of the people eating your food and they tell you how amazing it is and why he said as a part of different because we do authentic Mexican food we use authentic products everything is fresh make right there on the moment do you want it they will be make we don’t pre-cook we are on your scan everything is fresh star for an hour salsas to our meats marinade it with 24 hours in advance to get those flavors and they are handmade tortillas delivered to our business.

What was your favorite childhood memory?
When my father took us to eat tacos at night, he was coming from work late at night during the weekend and they asked us to let’s go eat tacos; there was one of the best moments that I grew up on my neighborhood go to the corner and eat some tacos and the same time called my mother when she set up in her business hopper to accommodate our guess and try to give them a good service.
