Today we’d like to introduce you to John Vargas.
Hi John, we’d love for you to start by introducing yourself.
I have always had a passion for food. After the spending 7 years in the Army, I was unsure what my next mission would be. I bounced around jobs looking for my purpose and passion. I started working in hotels and felt like that was my calling. After spending 8 years working for different brands and positions, I found my desire for hotels fading.
I always wanted to have my own business since I was a child. After looking around and speaking with others I took to the kitchen to see how baking would make me feel. I learned quickly that baking was certainly something I enjoyed. After getting my products and recipes down I decided to leave the hotel industry and focus fully on my baking business.
I started doing small farmers’ markets locally and loved the aspect of selling and interacting with other business owners and customers. I then took the next step and started doing events outside of the local area to push my name even further.
April 2022 will make our 1-year anniversary of selling. I have learned a lot from this past year about business and the food industry. I started this business with no knowledge, no money, and no help only my passion and determination to make a product to bring to my community that everyone can enjoy. I have even started to do events outside of Florida to spread our brand even more.
We all face challenges, but looking back would you describe it as a relatively smooth road?
It has not been a smooth road at all for me. I started this business with very little and jumped right in the deep end. I learned a lot on what products people do and do not want. I have learned a lot about events and which to attend and how to maximize profits at those events. Struggles I currently have like many other business owners is finding staff to help.

Our main product is French Macarons hence the name. All of our products are made from scratch with quality ingredients like using European chocolates. Our flavors also set us apart from others around. We offer a wide variety of flavors as simple as vanilla and chocolate and complex and exotic as Japanese Yuzu. Our next biggest seller and fan favorites are our cookies. All of our cookies are made from scratch and baked fresh the day of events or day of ordering. Our cookies are larger than most and we change the flavors weekly to give our customers a nice change.

Seeing new customers take their first bite and their eyes get so big and they melt away enjoying our products.
