Community Highlights: Meet Joyce Cai of Chuan Fu

Today we’d like to introduce you to Joyce Cai

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Our journey started in 2016 when we opened our first Chinese Restaurant named U&Me Chinese on Kirkman Road. We offered authentic Chinese food from Sichuan region and Dongbei region. We were very popular and highly recommended on Yelp. We took over Chuan Lu Garden in 2019 and have been operating until now. We opened Chuan Fu in Winter Park in October of 2023. It has been on Michelin Guide since January of 2024. Opening a location in Winter Park is a challenge. Our original idea is that there is not an authentic Chinese restaurant in Winter Park at all, and we love to interduce more authentic Chinese dishes to local customers. We love to see more customers falling in love with authentic Chinese Food after trying. Chuan Fu means Sichuan House. So, as you know we are specialized in Sichuan cuisine. For people who are familiar with Sichuan cuisine, they know we use a lot of Sichuan pepper and pepper corns in preparing our food.
Chinese has a broad and various food culture. there are eight major cuisines, and Sichuan cuisine is one of them. We feel like very lucky to prepare and present this type of Chinese cuisine to local customers.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Of course, it is not a smooth road at all.

Ingredients- all of our Sichuan peppers are imported from Sichuan province in China.
Professionals – skilled professionals are hard to hire.
Awareness – to inform and educate our customers about our food.
Acceptance by customers – make sure it is accepted and loved by majority customers.

Fair competition

Minority – being a woman business owner it is very hard in the man dominated food industry.

Alright, so let’s switch gears a bit and talk business. What should we know?
Chuan Fu restaurant is specialized in Sichuan cuisine. We use a lot of Sichuan pepper and pepper corns in preparing of our dishes. There are lot of things we want readers to know about us. However, writing is not my expertise. I have to use citations from certified resources.

Below is the introduction on Michelin Guide
This sleek Winter Park spot is elegant and polished but never feels stuffy thanks to warm service that shows genuine consideration for each guest. The large Szechuan menu features many of the classics served in a traditional family-style manner, and the solid cooking shows its skill with layered flavors and bold takes. First, tuck into the cucumber salad, with its punch of soy and garlic, before settling into the Chongqing chicken with its chili and peanut garnish. A bowl of flaky white fish in a savory broth loaded with vegetables, pickled cabbage and glass noodles is further proof that heat and spice are balanced nicely here.

Sichuan food has a rich history dating back thousands of years, rooted in the Sichuan province of China. Known for its bold flavors, particularly the unique spiciness that comes from Sichuan peppercorns, this cuisine is one of the main styles that have shaped what we recognize today as Chinese food. The chemistry of heat, tang, sweetness, and the iconic numbing sensation is what makes Sichuan food so distinctive. At Chuan Fu, this history is honored in every dish they serve, offering diners a true taste of Sichuan culinary traditions.

We’d love to hear about how you think about risk taking?
There are always risks.
The first risk will be acceptance. At first, we are wondering if our food and restaurant concept will be accepted and loved by most customers.
The second risk is financial risk. With upfront investment to take the empty store and renovate with all new look, it costs a quite bit. Will our restaurant be successful and profitable is the risk.
