Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Let me introduce myself! My name is Lucia, and together with my partner, Jonattan, we created Taito Sushi about two years ago. We’re originally from Valencia, Venezuela, and moved to Orlando seven years ago with big dreams, clear goals, and a passion for building a better future.
Jonattan graduated in Culinary Arts, and I earned my degree in Business. Together, we started our sushi journey with sushi boats and catering services for all kinds of events. In May 2024, we opened our first food truck at A La Cart Sodo, and we’re thrilled to announce that this spring we’ll be opening our second food truck in The Backyard Ocoee!
It wasn’t always easy, but every challenge inspired us to work harder and dream bigger. Our goal with Taito Sushi is not just to serve food but to create an experience—a way to share our culture and passion through every bite.
Our concept? Sushi, but with a Caribbean twist! We offer both classic and tempura rolls, blending traditional flavors with a sweet twist, featuring ingredients like mango and sweet plantain. Looking ahead, we hope to keep growing and sharing Taito Sushi with food lovers across Orlando and beyond.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It hasn’t always been a smooth road, but every challenge has taught us something valuable. Moving to a new country was a big change, and like many immigrants, we had to start from scratch. Adjusting to a new culture while pursuing our dreams wasn’t easy, but it gave us the drive to work harder.
When we started Taito Sushi, one of our biggest challenges was introducing a unique concept like Caribbean sushi and making it stand out in such a competitive market.
We’ve also faced the usual hurdles of running a food business, like maintaining quality, managing a tight budget, and juggling long hours. But every struggle has been worth it, and today, we’re proud of how far we’ve come. Challenges may slow you down, but they also make success that much sweeter.

The crisis has affected us all in different ways. How has it affected you and any important lessons or epiphanies you can share with us?
Of course. The pandemic taught us a valuable lesson: we’re here today, but we don’t know about tomorrow. It was a very tough time for everyone. However, if there’s one good thing to take away from that experience, it’s that life is short, and if you have a dream, you should do whatever it takes to make it happen.
