Today we’d like to introduce you to Carlos Gonzalez.
Hi Carlos, please kick things off for us with an introduction to yourself and your story.
It was around Covid time 2020 n I was managing longhorn steakhouse n it just became a lot for management n was talking with my sisters about it n she said that her friend was selling a food truck n I said well if im going to work this hard I mightest we’ll work for myself so I invested into a food truck n started! At the same time my dad (lucky) had passed away for heart attack n so I named this business after him Lucky’s kitchen and A year later sold the driving food truck due to when I had maintenance issues it would stop the whole business n ended up getting a used trailer built. Ran that for another 2 years n built up enough credit to purchase a new trailer which I have now n love it. So all in all my I’m living a legacy for my dad which pushes me everyday as he loved to cook as well n was a retired chef that raised me in the kitchen n created it to be my passion as well!
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Maintenance issues stopping business. Days where didn’t make as much as others. Trying to find the right location n get profitable events. Not having the helped needed at certain times.

I have a gourmet burger, chicken sandwiches steak n chicken Philly plus more food truck. I created different toppings on each sandwich plus flavor making it different than just a plane sandwich. Known for the Lucky’s Philly, the Philly burger n the holy chicken sandwich as top sellers! My proud moment is seeing the the happy faces n getting Great feedback for my hard work! Any advice for finding a mentor or networking in general?
Talking with other owners of food trucks that’s been in the game longer has helped on top of watching videos n also found networking groups that I attended to help promote myself n get my name out there
