Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
i was born and raised in korea, completed my military service, and then flew to Australia. there, i studied culinary arts in school while working evenings in restaurant. My first job was as a dishwasher at an italian restaurant. although i could’t speak English, my determination to succeed was stronger than anyone else’s . I started work one hour early and stayed one hour late without asking for extra pay, learning as much as i could by observing others.
My second job was at a Japanese restaurant where only Japanese chef worked, and i grew significantly during my time there. Later, i had the oppotunity to work at michelin-starred restaurant name ‘Jungsik’ in korea.,where i learned a great skills about perfect foods. Eventually, i got the chance to come to USA,bringing with me big dreams that i am still pursuing today.
Currently, my goal is to make my restaurant known and cherished by many, and i am driven by a strong sense of responsibility not to disappoint those who come to dine with us .i work hard every day to research, improve,and create. i strive to make every customers feel as comfortable as if they were dining in their own home while providing them with unique experiences and impeccable food from the moment they enter the restaurant until they leave.
My ultimate ambition is to reach a point where no one would ever think of underestimating my food or my restaurnant. i want my restaurnat to be recognized as a must-visit destination in Florida, i will keep giving my absolute best until that happens.
In addition to running Akasaka sushi, i am preparing to open a new Asian tapas concept restaurant in Longwood early next year. i am also planining to create an exclusive, reservation-only space where i can showcase the finest dishes, offering a truly exceptional dining experience.
I come to united states with no connections, no family, and no friends, but i am determined to do my best every single day. i will pour my heart into developing and creating excellent dishes that reflect my unique Korean background while appealing to American tastes, striving to make food that Americans will love and appreciate.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
it feels like i’ve walked a very difficult path. When i first came to the u.s on a visa, there were so many limitations on what i could do without obtaining a green card. the process of obtaining it was incredibly challenging. during the pandemic, while running my restaurant, i often thought about giving up and returning to korea. however , i was able to overcome those struggles thanks to the support of great colleagues around me.

one surprising thing that most people who know me or my work might not know is that i started my culinary journey as a dishwasher in an italian restaurant, not knowing any english at the time, i worked extra hours for free, observing and learning as much as i could because i was deternined to succeed. My path has been anything but easy-coming to the u.s.a with no family, no connections, and navigating the challenges of building a restaurant during the pandemic, this background has deeply shaped my work ethic and my passion for creating exceptional dining experiences, which i carry into everything i do at Akasaka sushi.
