Hi Mallori, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
The Pasta Bar actually started in my own kitchen.
I’ve always loved cooking Italian food, and I made it all the time for my husband and stepson. It kind of became our thing… pasta nights and hanging out in the kitchen together.
One night my husband looked at me and said, “Let’s open a pasta place with your pasta.” From there the idea just kept growing. We realized we didn’t want it to just be a business, we wanted to build something together. Something we could grow and work on side by side every day.
And that’s how The Pasta Bar was born.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Building a business together from the ground up is fun… but it’s also exhausting. There have been long nights, financial risks, and moments of doubt. There were days we wondered if we were doing everything “right.”
And building a business together as husband and wife? That comes with its own challenges. We had to learn how to communicate better, give each other grace, and stay united even when things felt overwhelming.
One of our biggest setbacks was pouring our hearts into building our social media platforms…growing them, engaging with our community, celebrating milestones. Only for Meta to disable them all. Just like that. It felt like starting over from scratch.
Alright, so let’s switch gears a bit and talk business. What should we know?
The Pasta Bar is a fast-casual, build-your-own pasta concept rooted in family.
We specialize in fresh, made-to-order pasta bowls where guests can choose their pasta, sauce, protein, and toppings. Creating something that feels both customized and comforting. From classic marinara and Alfredo to vodka and creamy pesto sauce, meatballs, chicken, Italian sausage, and fresh toppings, everything is built around bold, authentic flavors and generous portions. In addition to our pasta bowls, we also offer beautifully arranged charcuterie boards and charcuterie cups, perfect for events, gatherings, or catering.
We’re especially known for our pasta flights, a guest favorite that lets you enjoy three small cups of pasta with different sauces and meats, making it easy to sample multiple flavors in one delicious experience.
But what truly sets us apart isn’t just the food, it’s the experience. We built The Pasta Bar to feel welcoming, approachable, and personal. We’re hands-on owners. We’re present.
We’re especially proud of the fact that this brand was built from our kitchen table up. Every recipe was tested at home. Every detail was thought through by us. Every social media post, every menu decision, every event, it’s us.
What’s next?
When we think about the future of The Pasta Bar we see growth, but we want to do it the right way…
Right now, our biggest focus is strengthening what we have. But we look forward to expanding into more food halls throughout Central Florida. We want to bring our made-to-order pasta bowls to more communities, making it easier for people to enjoy fresh, customizable meals without compromising quality or the personal touch we’re known for.
