Conversations with Jamar White

Today we’d like to introduce you to Jamar White

Jamar, we appreciate you taking the time to share your story with us today. Where does your story begin?
The Buffalo Boss was started in 2010 by founder Jamar White. He had one goal in mind create the best wing joint in town. Jamar is a wing Fanatic. He wanted to create a wing concept restaurant that had the urban feel of the Brooklyn streets, injected with that famous Brooklyn Hip Hop swagger, a place that would bring the party back to the “Party Wing”.

This passion gave birth to the Buffalo Boss Brooklyn’s Finest Wings. At the heart of the concept was a passion for fresh wings. Marinated for 24 hours, no antibiotics, no growth hormones, Jamar insisted on serving only quality poultry and fresh ingredients for his house made sauces. He wanted to keep the concept fun and fresh. The Buffalo Boss menu includes 12 house-made addictive sauces, chicken tenders, sweet potato fries and for the kid in all of us, a fun treat… Fried Oreos and fries Pop tarts.

Founder Jamar White was raised in the projects of Brooklyn NY and became one of the first in his family to attend college, where he realized his passion for wings and business. Being the first cousin to iconic Brooklyn rapper Jay-Z which inspired him to infuse hip hop in the DNA of the Buffalo Boss restaurants. His vision to create a restaurant that is exciting, current and would change the way wings were done.

The Buffalo Boss’s early success drove the interest from the Barclays Arena and the Brooklyn Nets to have the Buffalo Boss as a partner with two concession stands in the arena. Buffalo Boss has grown to locations in Milwaukee, one location in Dubai, and a Cloud Kitchen in Orlando featured on Doordash, UberEats and other platforms.

Jamar’s love for entrepreneurship and sharing it with his community has sparked business growth. His Buffalo Boss owner/operator program has given other minority entrepreneurs and opportunity to run their own Buffalo Boss restaurant. Jamar gave is his long time manager and employee, Ricardo Ibanez and Giovanni Torres a shot to operate and own their own Buffalo Boss location in Orlando in 2023. It has been a huge success and has expanded the business to Florida in the Orlando area with another location Downtown Orlando in the works for 2025.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The road has not been smooth. The toughest part of the journey was organizing the business and staying alive during adversity. That is where your passion for the business comes in. Controlling food cost and cash flow is the hardest thing because food prices fluctuate and you have to know how to keep spending low.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I’m most proud of the processes I created to track the business progress and operations. I created processes to make the freshest, cripsy on the outside and juicy on the inside wings. We also let the customers choose their cook times from regular to extra crispy.

What set’s Buffalo Boss apart from other wing places are our sauces. The hot is hot, the sweet is sweet. We don’t play with flavor, our sauces are bold and tasty. We also let the customer mix sauces to create their own personal flavors and thats what make Buffalo Boss unique.

Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
My owner/operators who believed in the concept and have put their blood, sweat, and tears in to make sure the Buffalo Boss is a success. Ricky and Gio my Orlando owner/operators has allowed the concept to expand to the Orlando area and has kept the quality and service of the Buffalo Boss high for our new customer base in Florida.
