Today we’d like to introduce you to Rosa Sanchez.
Hi Rosa, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
In 2021 my friend asked me to partner with her and open a taco food truck. Little did I know about the food industry but I agreed. Six months later she decided it was to much for her and did not want to continue. I decided that I would buy her out and continue on my own. It has been quite a journey but I love it. The food truck 4 year anniversary will be July the 4th weekend. I am still amazed on how far the food truck has grown. We started selling tacos at a convenient store parking lot and grew to being part of city events, graduations, weddings, community and company events. My niece has been with me since I decided to take over and I am so grateful for all the work she has put in and continues to do. My son also helps out when ever he can. Its a family business and I am proud of where we are and how much we have grown.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The food industry has its ups and downs. Its not always smooth sailing. We try our best to satisfy our customers best we can. I would say our biggest struggle is being extremely busy and customers having to wait for their food.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I work at a car dealership. I go in once a week and do all title and registrations for the vehicles sold. I also do payroll and invoices for two roofing companies. I am also a Notary so I have married couples and I notarize documents. The one thing that I am the most proud of is my Food Truck business.
How do you think about happiness?
Knowing my family is okay makes me happy. I love my family.
