Today we’d like to introduce you to Andrew Scala.
Andrew, we appreciate you taking the time to share your story with us today. Where does your story begin?
JAM HOT CHICKEN was always a dream or what if. Filing for an LLC in 2018 without any real idea of what I was going to do or when – I knew there would be an eventually. Fast forward to 2019, JAM HOT had its first pop-up in October of 2019. Putting off until the pandemic hit, I was furloughed from my pizza shop gig rightfully so, early 2020. I used this time as a way to challenge myself and be creative, do something. Then is when I decided to do curbside pickups serving the hot chicken sando from my home all through Instagram. This went great and did this a few times til having enough courage to want to do it full time. I quit my job and pursued pop-ups with JHC around new town all of 2020 into 2021. Top of 2021, I Listened to my family and friends and decided to seek a loan and open up a brick and mortar! I wouldn’t have been able to do this without my mom and dad and the support they’ve given me! Shoutout to y’all. Now we’ve been going hard since December 2021 at our brick and mortar in winter park with goals to offer the best hot chicken in FL!
We all face challenges, but looking back would you describe it as a relatively smooth road?
No smooth road at all! Challenges every step of the way. From construction phase with labor and material shortages, permitting challenges to always needing more money to complete anything and everything. There are struggles with staffing which cause me to not be able to do a lot of the things I want to do but I’m learning not everything can be done right away. Which is okay!
What sort of changes are you expecting over the next 5-10 years?
We’ve seen a lot of trends lately due to Covid with take-out and cleanliness being paramount. Furthermore, quality is everything. I believe in offering the best quality possible and practicing honest business practices and being honest with our guests. People enjoy upfront ness and honesty.
