Hi Carolina, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I didn’t originally set out to open a restaurant. My background is in business administration, finance, and corporate management, and for many years I worked in complex organizations and fast-growing startups, leading teams and building operations under pressure. When I moved to the United States, I was presented with a professional challenge unlike any I had faced before.
In late 2020, in the middle of the pandemic, I acquired 240 Rose Cafe, a business that had been completely closed. There was no active operation, no team, and no certainty about when or how the hospitality industry would recover. Rather than seeing that moment as a limitation, I saw it as an opportunity to apply my experience to a situation where rebuilding from the ground up was the only option.
What followed was not simply reopening a café, but redesigning an entire business. I redefined the concept, rebuilt the brand, renovated the space, and created operational and financial structures that had never been in place. At the same time, I built and trained a new team during a period of extreme uncertainty, constant regulatory changes, and shifting consumer behavior.
The most important transformation wasn’t aesthetic, it was strategic. I approached the business with the same discipline I had developed in corporate and startup environments, focusing on structure, process, financial control, and long-term planning. That approach allowed the business not only to reopen, but to grow steadily and sustainably. Since 2020, 240 Rose Cafe has multiplied its revenue several times over and exceeded the projections that initially seemed unrealistic given the circumstances.
Today, 240 Rose Cafe is the visible outcome of that challenge. For me, it represents the ability to take a closed, distressed business, make critical decisions under pressure, and transform it into a growing company through experience, leadership, and strategic vision.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Not at all. It was far from a smooth road. Starting with the fact that the business was completely closed when I acquired it, everything had to be rebuilt at the same time, in the middle of a global crisis and in an industry that was one of the most affected.
One of the biggest struggles was operating with constant uncertainty. Regulations changed frequently, supply chains were unreliable, and staffing was extremely challenging. Hiring and retaining a team required much more than filling positions. It meant training people from scratch, building trust, and creating a culture when stability didn’t exist yet.
Another major challenge was financial. Every decision mattered. Cash flow had to be managed very carefully, projections had to be constantly adjusted, and I had to balance investing in growth while protecting the business from unnecessary risk. There was very little margin for error, especially in the early stages.
Personally, the hardest part was carrying the full responsibility of every outcome. There was no safety net. Strategy, operations, finances, and people management all depended on my decisions, often made under pressure and with limited information. That experience forced me to grow quickly as a leader.
Looking back, those challenges shaped the business and shaped me. They pushed me to be more strategic, more disciplined, and more resilient. The difficulties were real, but they are also the reason the business is strong today.

What was your favorite childhood memory?
Without a doubt, my favorite childhood memory is growing up supported by my mother and my grandmother. We didn’t come from a financially privileged environment, but education was always the focus, and that shaped who I am today.
Some of my best memories are the afternoons spent at my maternal grandmother’s house. It was a place filled with warmth, conversation, and encouragement. Those moments weren’t about material things, they were about learning, feeling supported, and being surrounded by strong women who believed deeply in the importance of education and effort.
