Hidden Gems: Meet Jamie Lynch of Chuck’s Homemade Italian Ice

Today we’d like to introduce you to Jamie Lynch.

Hi Jamie, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
My story really began long before I officially became a business owner. I grew up in a close knit Italian American family where food, community, and hard work were a part of our DNA. My parents started Chuck’s Water Ice in South Philadelphia in 1984, when I was just four years old. They created all their own original recipes, and my dad’s “do it right or don’t do it at all” mentality. That small family shop became a staple in our neighborhood for over 20 years and a huge part of my identity.

Years later, in 2015, life brought my family to Florida, and after losing my dad in 2007, I felt a pull to bring a piece of home with me. What started as – “why can’t we get any good water ice in Orlando” – has grown into something bigger than I ever imagined. My husband and I opened Chuck’s Homemade Italian Ice Florida (we had to drop the term “water ice” and give our customers what they know) … but hey, as my dad would say, “call it whatever you want just don’t call me late for dinner!” With my husband, my mom, our kids, and family by our side, using the same recipes and the same love that built the original shop all those years ago, we launched Chuck’s in Florida in 2022. We started mobile: a food trailer from a friend, a few freezers, and faith that people would feel the love and taste the difference in what we make.

From there, it took off. We did a bunch of local events and farmers markets, made connections at our local schools and FFA clubs, always supporting and donating back to our community. We added a storefront 2 years later in 2024, expanded our menu, and continued to do events, catering, and partner with local schools and clubs. Today, Chuck’s is not just a dessert shop – it is a little piece of Philadelphia in the heart of Central Florida, a place where families gather, where kids make memories, and where everything we serve still reflects the legacy my parents started over 40 years ago.

At the same time, I have also built a career in healthcare and pharmacy benefits management, leading sales readiness, and training for a global organization. I have my Master’s Degree in Biomedical Science and was once pre-med, studying to become a Physician. Balancing both worlds has not always been easy, but it has taught me resilience, creativity, and just how much can be built with passion and purpose.

Chuck’s is more than a business for me – it is a tribute. It is my way of honoring my family, raising my kids with the same work ethic I was raised with, and giving our community something made with real love. Every time I hand someone a cup of our Lemon Ice or a Gelati, I am sharing a piece of our story.

And honestly … we are just getting started.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The road has definitely not been smooth, but every challenge has pushed us to grow stronger and more intentional.

When we brought Chuck’s to Florida in 2022, we were essentially starting over in a place where no one knew what “water ice” even was. Changing our name to Chuck’s Italian Ice was an important first step. Educating the community, building trust, and proving ourselves one event at a time came next, and required patience, grit, and a whole lot of late nights. We faced everything from equipment failures, to navigating Florida’s weather, which can shut down an entire day of sales in minutes.

We grew; we also had to learn the local event and vendor landscape. In Philadelphia, we never operated a mobile model and we were only open seasonally, in the summer time. Not every door opened for us – some closed without warning or without explanation at all. Being overlooked or excluded, especially when you are pouring your heart into your business, is tough. But those moments taught us resilience, helped us refine how we show up, and pushed us to build partnerships with people and places that truly value us.

Balancing the business while also working full time in corporate America has been its own challenge. There are days where I switch between corporate meetings, making fresh batches of water ice, helping our kids with homework, and prepping for weekend events – all within the same 24 hours. It’s not always perfect, but it’s ours.

The biggest challenge, though, was learning to run this business without my dad – the heart of the original Chuck’s in Philadelphia. Every decision, every risk, every pivot has been made with the goal of honoring his memory and carrying his legacy forward. My brother has been our biggest supporter and gave my husband and I the push that we needed to open Chuck’s Florida.

Despite the bumps, each challenge has made us stronger, more creative, and more rooted in our community. None of it has been easy – but all of it has been worth it.

Chuck’s Homemade Italian Ice Florida is a family-owned dessert shop rooted in a 40-year Philadelphia legacy and rebuilt here in Central Florida with the same heart, same recipes, and the same commitment to community. We make authentic Italian Ice in small batches with real fruit, no shortcuts, and whole lot of love. Our Lemon ice is fresh-squeezed, our chocolate is famous for a reason, and our Gelati (Italian Ice layered with hand dipped ice cream and a cherry on top) has quickly become our signature best seller.

What make’s Chuck’s special is that everything we do is personal. Our recipes are the ones my mom and dad used in our South Philly shop starting in 1984. Every flavor carries a piece of our family’s story, and we work hard to bring that nostalgia to Florida in a way that feels fresh, fun, and community-centered.

We operate a storefront in Christmas, Florida, a mobile truck, and a new Italian ice cart, allowing us to serve our community at schools, festivals, farmers markets, HOAs, corporate events, weddings, and private parties. We recently expanded into our first wholesale partnership with Mama Cannoli in Daytona Beach – our very first Chuck’s “counter” inside another local business.

We specialize in bringing families together through simple, high-quality treats made from scratch. We recently started making our own ice cream too – some flavors at least. We are known for great tasting products, affordable prices, friendly service, seasonal specials, and the feeling you get when you walk up to our window – like you are part of the Chuck’s family.

What I am most proud of is how organically our brand has grown. People do not just come to us for dessert – they come for the experience, the memories, the connection. Northerners find us to get a taste of home, kids stop by on their bikes after school, families make us part of their weekly routine, and customers travel from all over Florida because they “finally found real water ice” they remember from up North.

Can you talk to us a bit about the role of luck?
Luck has absolutely played a part in our journey. A friend stored her Italian Ice trailer with us and no longer needed it, which became the spark for our mobile business. We also happened to find an affordable storefront in the small town of Christmas – something almost unheard of today. Those lucky moments opened the door, and hard work carried us the rest of the way. I can write a book!
