Hi Archie, so excited to have you with us today. What can you tell us about your story?
My name is Archie Akkharasin, and I’m originally from Thailand. My journey into hospitality and cocktail culture really began after I graduated from university and made the decision to move to the United States.
I first lived in New York, and that experience completely shaped my perspective on cocktails. Being in a city with such a strong and diverse bar scene allowed me to truly study cocktail structure, classic foundations, technique, and the artistry behind bartending. It wasn’t just about mixing drinks — it was about understanding balance, history, and storytelling through flavor.
After spending time learning and refining my craft, I was presented with an opportunity to open a bar in Orlando with two partners. That opportunity became the beginning of everything. It was the moment where passion turned into reality.
Opening NOIR Bar allowed me to combine my Thai roots with the Western cocktail education I developed in New York. It became a reflection of my personal journey — moving between cultures, learning from both, and finding a way to bring them together into one cohesive concept.
That’s how it all started: from Thailand to New York, and eventually to Downtown Orlando — building something that represents both where I come from and what I’ve learned along the way.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Not at all — and honestly, we’re grateful for that.
Launching NOIR was stepping into something very new for Orlando. Our concept isn’t just about serving drinks; it’s about storytelling, technique, and cultural depth in every cocktail. Because of that, it wasn’t always easy for guests to immediately understand what we were doing.
In the beginning, some people would walk in, look at the menu, and feel intimidated by the complexity. We’d occasionally hear, “Why does a cocktail have to be this elaborate? Can I just get tequila, soda, and lime?” — and the answer has always been yes, of course you can. But what we stand for goes beyond simplicity. We believe in craft, in balance, in intention. Every ingredient and technique has a purpose.
There were moments when it felt challenging to explain that vision. But instead of changing who we were, we decided to stay committed to our identity and let the quality of the drinks speak for itself. Over time, we began attracting guests who truly appreciate the art of cocktail-making — people who are curious, open-minded, and excited to explore flavors that bridge cultures.
Another learning curve was understanding the local market. Orlando has a strong love for tequila, while I personally gravitate toward gin. In the beginning, our menu leaned heavily toward gin-based cocktails because that’s where my creativity naturally flowed. Eventually, we realized we needed to meet the market halfway. We introduced more tequila-based creations, and the response was incredible.
What surprised us, though, was that gin lovers began seeking us out specifically because they couldn’t easily find thoughtfully crafted gin cocktails elsewhere. So in the end, it became a win-win. We evolved, adapted, and expanded our range — without losing our core identity.
Every obstacle forced us to listen more, refine more, and grow — not just as business owners, but as individuals. The road hasn’t been smooth, but it has absolutely been worth it.

NOIR Bar Downtown Orlando is a concept-driven cocktail bar built on one core philosophy: bridging cultures into a glass. We are not just a place to grab a drink — we are a space where Eastern and Western influences meet through flavor, technique, and storytelling.
The name itself explains who we are. “NOIR” represents the dark, elegant, old-world aesthetic inspired by Western cocktail tradition. “นัวร์” represents the Thai meaning of rich, delicious flavor — bold, layered, and expressive. That duality defines everything we do.
What do you do and what do you specialize in?
We specialize in craft cocktails that combine classic Western foundations with Eastern — especially Thai — ingredients and perspectives. Our current menu, Garden of NOIR, features 12 carefully curated cocktails that reinterpret traditional structures with modern, globally inspired flavors.
You might recognize a familiar cocktail format, but then discover unexpected ingredients like Thai herbs, spices, tropical elements, or flavor combinations that create something completely new yet balanced. Technique is extremely important to us — from infusion and clarification to thoughtful garnish and presentation.
At the same time, we never forget hospitality. Whether someone wants a complex, layered cocktail or something simple and classic, we welcome both. Craft is our identity, but experience is our priority.
What sets you apart from others?
What sets NOIR apart is intention.
Many bars focus on trends. We focus on narrative. Every cocktail has a purpose — it’s not just about taste, but about cultural connection. The fusion of Thai influence with classic European and American cocktail traditions is not commonly found in Orlando, and that makes our menu feel distinct.
We also embrace depth. Our drinks are not built to be flashy for social media alone; they’re built to be balanced, thoughtful, and memorable. We stand firmly behind quality over shortcuts.
Another thing that sets us apart is that we stayed true to our vision, even when it wasn’t the easiest route. Instead of simplifying our concept to fit expectations, we educated, adapted thoughtfully, and allowed the right audience to find us.
What are you most proud of brand-wise?
We’re most proud of our identity.
NOIR is not just a name — it’s a philosophy. The dual meaning, the aesthetic, the cultural bridge, the commitment to craft — everything aligns. From the design of the space to the flavor profiles in our cocktails, the brand feels cohesive and intentional.
We’re also proud that gin lovers, tequila lovers, and cocktail enthusiasts alike have found a home with us. We’ve created a space where people who truly appreciate the art of cocktail-making feel understood.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
I see the cocktail industry becoming more intentional and experience-driven. Guests are no longer just looking for a drink — they want a story, a connection, and something memorable.
Cultural fusion will continue to grow, with bartenders drawing inspiration from global flavors and techniques in a more meaningful way. Sustainability will also become a standard rather than a trend, with more focus on responsible sourcing and zero-waste practices.
At the same time, I think we’ll see a balance between elevated craft and approachability. The best bars will be those that can deliver complex, well-crafted cocktails while still making every guest feel comfortable and welcomed.
Overall, the future of the industry feels more creative, more global, and more thoughtful — and that’s exciting to be part of.
