Hi Kasey, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
After successfully launching our Peruvian restaurant in Kentucky, we decided that the food industry was for us. After four years in Kentucky we decided it was time for a change and moved to Florida, inspired by the booming food truck scene. We aimed to start small, but our initial experience was challenging; the first company we approached for a food truck went bankrupt, leaving us without our promised vehicle. We did not give up. We sought out another supplier, and this time we succeeded. Finally, we launched our Peruvian food truck in Orlando, excited to share our cuisine with a new community.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Our journey to opening a Peruvian food truck in Florida was filled with challenges. Initially, we struggled to decide between a food truck and a restaurant. After much deliberation, we opted for the food truck, but faced hurdles in understanding the local food truck scene. We chose a well-known company to build our truck, only for them to go bankrupt, and leave us unfortunately empty-handed. Despite these setbacks, we persevered and eventually secured a truck and a location to operate. The bumps along the way made our eventual opening even more rewarding, and I couldn’t be happier and more grateful for the experience.
