Today we’d like to introduce you to Alison Gowen and Michel Revy.
Hi Alison and Michel, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Michel has been a chef for over 20 years and has always had the goal of owning his own restaurant. I was a special education teacher for almost nine years. When COVID happened, I was on maternity leave and Michel was an executive chef at Todd English’s blue zoo and was getting furloughed. We began to seriously talk about what our next move should be. I was struggling with the idea of leaving my two boys to go back to work and one day he just said, maybe we should have our own restaurant. From that point on, we never looked back.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
We have been fortunate that it has been a relatively smooth road. Of course, we had the setback of COVID which affected our build out from supplies being delayed to subcontractors being limited. Which ultimately delayed our opening date by four weeks. However, we were able to get it done and we love how Posto Pizza turned out!
Appreciate you sharing that. What else should we know about what you do?
Michel: I’m the co-owner of Posto Pizza. We specialize in craft pizzas which showcase a light Neapolitan style crust with fresh ingredients. Professionally, I am the most proud of our product at Posto Pizza. We took the time to make sure our crust was exactly what we wanted. Trying out different temperatures and flours. We also took our time looking at different vendors to make sure our pizzas were unique to the area. I’m also proud of the way that we continue to push to make our menu better. For example, we recently eliminated store bought bacon and started making our own.
What do you like best about our city? What do you like least?
What Ali and I like most about the city is how great the food scene. You have the perfect combination of chain restaurants that remind you of the comforts of being a kid and locally-owned restaurants that encourage you to go outside your comfort zone and try something new.
Least favorite thing about our city, hands down, I4 traffic.
