Hi Gonzalo, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I had the opportunity to work in several Mediterranean restaurants in New York, where I gained hands-on experience in all aspects of restaurant operations. Six years ago, my wife and I decided to move to Florida, and we instantly fell in love with this restaurant—both for its location and the amazing community around it. We felt a strong connection and decided to take a leap, purchasing it from another couple. Since then, we’ve focused on elevating the flavors and ambiance, continuously improving the dining experience for our guests
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
No, it hasn’t been an easy road. We took over the restaurant just six months before COVID hit, and like many business owners, we were scared that we might have to close our doors. However, even when we could only offer takeout, the support from our community was incredible, allowing us to keep the restaurant running successfully. When we were finally able to reopen fully, we faced another challenge—hiring staff in the midst of a post-pandemic labor shortage. It was a struggle, but over time, we built a strong team, and many of them are still with us today. Looking back, those challenges made us stronger and even more grateful for the community and team that we have now.

We are a Greek Mediterranean restaurant located in downtown Lake Mary, offering a charming European ambiance that transports guests to a beautiful, flower-filled garden—both indoors and on our outdoor patio. What truly sets us apart is our commitment to fresh, high-quality ingredients and flavors that are both authentic and unique to the area.
We take pride in creating an inviting atmosphere where guests can enjoy not just a meal, but an experience—whether it’s a casual lunch, a romantic dinner, or a special celebration. Our dedication to hospitality, attention to detail, and passion for great food have made us a beloved spot in the community.

Can you talk to us about how you think about risk?
Risk-taking is essential for growth, and one of our biggest risks was taking over a restaurant that was already successful under its previous owners. There was always the fear of disrupting something that worked, but instead of just maintaining it, we focused on improving every aspect—from flavors to ambiance to community engagement. That risk paid off, and we’ve taken the restaurant to an even higher level. To me, risk isn’t about being reckless—it’s about having the vision and confidence to make something great even better.
