Hi Kadek, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Royal Hibachi started with a passion for Japanese cuisine and a dream to bring high-quality, freshly grilled hibachi to the streets. I saw how much people love the experience of hibachi dining watching their food cooked right in front of them but realized it was missing from the casual, on-the-go food scene. So I decided to take that experience on the road.
Me & my wife Lyla started small, with just one truck, a flat top grill, and a lot of hustle. Over time, through word of mouth, great customer feedback, and staying true to fresh ingredients and bold flavors, Royal Hibachi grew into a local favorite. It hasn’t always been easy, but seeing people smile after their first bite makes every long day worth it.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It definitely not always smooth road, but every challenge taught me something valuable. In the beginning, just getting the food truck up and running was a huge hurdle from getting permits, finding a reliable truck, to outfitting it with the right equipment.
Weather, parking restrictions, and finding steady foot traffic were also big learning curves. Some days we’d prep everything, show up excited, and barely break even. Then there were supply issues, rising food costs, and of course, the pressure of running everything cooking, managing, marketing often all by myself.
But those struggles pushed me to be resourceful and resilient. Every setback reminded me why I started Royal Hibachi in the first place: to bring something fresh and exciting to the community. The hard days made the good ones even more rewarding.

Royal Hibachi is a Japanese inspired food truck built on the idea that high quality hibachi shouldn’t be limited to dine-in restaurants. We specialize in made-to-order hibachi meals grilled fresh on the spot featuring tender steak, shrimp, chicken, veggies, and fried rice, all seasoned to perfection and served fast.
What sets us apart is our commitment to freshness, flavor, and experience. We bring the excitement of hibachi style cooking to the streets hot off the grill, with bold, savory flavors that keep customers coming back. Can you tell us more about what you were like growing up?
As a kid, I was always drawn to food and creativity. I liked taking things apart, trying new ideas, and especially helping out in the kitchen. I was independent, focused, and had a quiet drive to build something of my own one day. That mix of curiosity and hustle is what eventually led me to start my food truck.
