Linda, we appreciate you taking the time to share your story with us today. Where does your story begin?
I used to be an executive chef in Boulder County, Colorado. When my son was born, I started LG Culinary Concepts as a weekend job. I would go to clients’ homes and prepare meals based on their needs or for special occasions. When I moved back to Florida, I decided to restart my company and opened an LLC. I saw the need for different foods that residents said were not available in the area. About 7 months ago I started making cakes as well. Now I do a bit of everything. From private chef services to organic, vegan, and gluten-free custom cakes.
We all face challenges, but looking back would you describe it as a relatively smooth road?
The biggest struggle was getting through the low season when snowbirds leave and there is less work. The second issue has been this inflation. The cost of ingredients, packaging/materials, everything has gone up and therefore my prices have gone up. Sometimes that means less work and looking for the right client.
What has been the most important lesson you’ve learned along your journey?
Don’t give discounts. Extraordinary talent in an average setting never gets the recognition it deserves. I definitely cater to people that recognize and know my worth. I never mass-produce or use cheaper ingredients. Everything I do requires time and I use quality ingredients. I stand behind my decision to provide quality ingredients and good food.
