Today we’d like to introduce you to Matthias Wagner and Owen Johnson
Hi Matthias and Owen, can you start by introducing yourself? We’d love to learn more about how you got to where you are today.
I came to the US, specifically Brooklyn, NY, in 2019 from Lauf an der Pegnitz, Germany, and moved to Orlando June 2021.
My native New Yorker husband Owen and I had the idea of opening a German food truck during the pandemic and had a local company in Orlando build it before we moved down.
After all the national shortages and delays, our project was finished, and we began operation June 2022.
We all face challenges, but looking back, would you describe it as a relatively smooth road?
Like most starting businesses, we faced challenges. Through self-discipline, hard work, and strong focus, we are learning from mistakes. There will always be something to learn and grow from in the future.
Florida’s friendly small business environment has also contributed to our decision to opening Schnitz and Giggles in Orlando.
As you know, we’re big fans of Schnitz and Giggles. For our readers who might not be as familiar, what can you tell them about the brand?
We are a German food truck called Schnitz and Giggles. We serve authentic German street food from Bratwursts and Currywursts to our signature Schnitzels.
We are new to Orlando and have been in business for 4 months. I want to show that the German cuisine also has great street food options.
…and what pairs best with German food? Beer, of course.
We regularly partner with local breweries to bring our traditional cuisine to our new community.

Hard to answer as we are just starting out ourselves. I guess to continue to follow your path, don’t get discouraged, and things will fall into place.
Even on slow-selling days, never forget that you are following your dream.
