Today we’d like to introduce you to Fernando Alonso. They and their team shared their story with us below:
Paellas Madrileñas is primarily based on and developed from Spanish family traditions. Born in Puerto Rico to a Puerto Rican mother and European Spanish father, Fernando the owner and main chef, was always very interested in his father’s culture from which he learned most of his cooking skills. Family gatherings and great food were always the centers of his family and this was a tradition he would definitely follow. Fernando decided to buy his first paella pan after his father’s death with a plan to keep his father’s traditions alive.
Starting to develop a Spanish food business in Puerto Rico hurricane Maria Struck Puerto Rico. Fernando and his wife Libny were forced to leave the island as Libny was 8 months pregnant and the hospitals were without electricity and water. Arriving in Orlando Florida where both brothers and sister lived Fernando started working in construction and Libny as a seamstress. After visiting a farmers’ market one-day Libny and Fernando thought it might be a great idea to bring Paellas to the market as no one was offering European Spanish cuisine yet it is one of the best in the world.
Making it a side business, we were admitted to participate in a farmers’ market. We rapidly started seeing acceptance for our product and customers kept coming back for more. To this date, we serve our food in various farmers’ markets and developed a Spanish food-based catering business offering live cooking and delivery. To this date, we are actively looking for other ways to keep expanding our products and services.
We all face challenges, but looking back would you describe it as a relatively smooth road?
1. Fleeing a country where we had started developing our business. Starting a business in another country with a different language.
2. Working regular 9-5 jobs and developing a business wasn’t easy. Barely any time with kids and family.
3. Pandemic.

Paellas Madrilenas offers catering services for any type of event. Our specialty is the live-cooked Paellas where we cook our main dish on-site for you and your guests to experience the process.
We are very proud to share with our customers Fernando’s European traditions and bring them the most delicious paellas in Orlando. We believe what sets us apart from others is mostly our flavorful paellas and great customer service.
