
Today we’d like to introduce you to Kim Dill.
Hi Kim, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
We started Create Your Nature as a result of being on vacation for our anniversary and having our first acai bowl. At the time we were both practicing attorneys, and thought that these great bowls should be introduced to the Orlando/Winter Park area. With this being a completely new adventure, we threw caution to the wind and decided to open a café! We then decided we should offer more than just acai bowls, so, after three years of discussions, and planning, we opened in October of 2016. Our menu offers more than just acai and smoothie bowls. We expanded it to include a variety of sweet and savory oatmeals, gluten free overnight oats, salads, healthy snacks such as chia pudding and organic gluten free protein bites, and trail mix. We also pride ourselves on using unsweetened acai, compared to many places that use acai that is pre-sweetened. And what you see on our menu is what you get – there are no hidden ingredients. As the namesake implies, guests have the option to create their own of any of these offerings.
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Being a small, individually owned business there is always going to be bumps in the road. Getting our name known is something we continue to strive to do. Learning to juggle social media, online reviews is a new thing too. Covid certainly threw us a curve ball. Thankfully we did not have to close, but we had to adjust and are to go only right now. Guests can come in to order but we have indoor dining closed. We do have outdoor tables available.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I stopped practicing law before we opened the cafe in order to be able to focus on this, and because we also have two daughters. My husband and I are proud of our concept that we came up with on our own. We are truly appreciative of all the help we received from friends when it came to opening. And, of course, we are thankful for our team of great girls who work for us, including our manager who is a hard worker and dedicated to our business! I am a people person and I love talking with guests when they come in. I love helping them to become familiar with our menu, the ins and outs of it, why we came up with certain menu items, how we came up with the fun names we have. Our concept is different from others as we hope to provide an experience not just a menu item. The name Create Your Nature is to encourage others not to just create a bowl. It can be expanded beyond that, create who you want to be, or what you want to do, even if just starts by trying something new that you haven’t eaten before.
We’d love to hear about how you think about risk taking?
I would not say I am a risk taker, nor is my husband. However, this certainly was a risk to take, as neither of us owned a food business before, and we were both working in a completely different industry. (My husband still works full time as an attorney and runs his firm but he loves being in the café and washing dishes if needed!). We decided this was the time in our life to take a risk and try it as we likely would not have another opportunity to do it as our girls continue to grow up and eventually go off to college etc.
