Today we’d like to introduce you to Stephan Martin.
Stephan, we appreciate you taking the time to share your story with us today. Where does your story begin?
I have been a baker since I was 15 years old, and I obtained the title of master craftsman in 2017. My wife Veronique and I had two bakeries in France that we sold to come here to Florida. It’s been more than two years since we created Le Petit Paris in Winter Garden and we offer our bread and pastries in 10 farmer’s markets.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
One of the biggest challenges was to learn English, which is necessary for the visa, and to manage our bakery. I put in more than 2 years in advance, with different media and teachers and a coach specialized for the visa.
The staff’s recruitment and training remain a complicated part even after two and a half years.
Then it was relatively easy because we were well advised.
And we even finished second in the Greatest Baker Contest organized by the magazine Baking From Scratch this year out of more than 7000 participants.
Appreciate you sharing that. What else should we know about what you do?
We really want to make discover a real French artisanal bakery for the inhabitants of Orlando and a bit of nostalgia for our French compatriots.
we propose the same products as in our French bakeries, by using to the maximum of quality ingredients (for example we make import our butter for the croissant and our chocolate).
We offer the same products as in our French bakeries, using quality ingredients (for example, we import our butter for croissants and our chocolate), from bread baked daily (more than a dozen types), to pastries (croissants, cinnamon rolls, apple turnover, and many others), to patisseries such as eclairs, napoleons, pies, and personalized birthday cakes and for all events. I manage the production, with my team (a pastry chef and a baker) and Veronique manages the sales team at the bakery and at the farmer’s markets.
Is there anything else you’d like to share with our readers?
